Instructions
- 1
In a large bowl, mix the all-purpose flour with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add the eggs, milk, and 30 g melted butter, and whisk until smooth. Stir in the fresh parsley and chives. Let the batter rest for 15 minutes.
- 2
While the batter rests, make the filling. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and cook for 4 minutes until softened. Add the garlic and cook for 30 seconds more.
- 3
Add the fresh spinach to the skillet and cook for 2 to 3 minutes until wilted. Stir in the shredded roasted chicken, cream cheese, half of the mozzarella, nutmeg, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon black pepper. Cook for 2 minutes, stirring, until creamy. Remove from the heat.
- 4
For the sauce, place the cranberries, orange juice, brown sugar, ground cinnamon, ground cloves, balsamic vinegar, and fresh rosemary in a saucepan. Cook over medium heat for 8 to 10 minutes, stirring, until the cranberries burst and the sauce thickens slightly. Keep warm.
- 5
Heat a 20 to 24 cm / 8 to 9.5 inch nonstick skillet over medium heat and lightly grease it with a little butter if needed. Pour in a portion of batter and swirl to form a thin crepe. Cook for 1 minute on the first side and 30 seconds on the second side. Repeat to make 8 crepes.
- 6
Preheat the oven to 200 °C / 400 °F. On a lined or greased baking tray, place one crepe as the base and spread a thin layer of filling over it. Repeat, stacking 6 crepes with filling between each one. Use the remaining 2 crepes to finish the structure and add stability if any layer is uneven.
- 7
Using a sharp knife, gently trim the stacked crepe cake into a fir tree shape: wider at the bottom and narrower at the top. Place the trimmings on the sides or base to mimic branches if desired. Sprinkle the remaining mozzarella on top.
- 8
Bake the crepe fir tree for 12 to 15 minutes at 200 °C / 400 °F, until heated through and the cheese is melted and lightly golden.
- 9
Remove from the oven and let rest for 5 minutes. Serve the Christmas fir tree warm with the spiced cranberry sauce spooned over or on the side.
Chef tips
For cleaner cuts, chill the stacked crepes for 10 minutes before trimming into a fir tree shape. The sauce should be thick but pourable; if it reduces too much, add 1 to 2 tablespoons of water or orange juice.
Substitutions
You can replace the chicken with shredded cooked turkey. Cream cheese can be swapped for thick ricotta, and mozzarella for fontina or mild gouda. Chives can be replaced with dill or extra parsley.
