Instructions

  1. 1

    1. In a bowl, combine 60 ml (1/4 cup) orange juice, 15 ml (1 tbsp) lime juice, 30 ml (2 tbsp) olive oil, half of the chopped garlic, 40 g red onion, cumin, allspice, 1 teaspoon salt, and 1/2 teaspoon black pepper. Rub this marinade over the flank steak and let it rest for 20 minutes in a cool spot.

  2. 2

    2. Place the malanga in a pot with 1000 ml (4 1/4 cups) water and 1/2 teaspoon salt. Bring to a boil, then cook over medium heat for 20 to 25 minutes, until very tender.

  3. 3

    3. Meanwhile, make the mojo. In a small skillet over medium heat, warm 15 ml (1 tbsp) olive oil. Sauté the remaining garlic, 80 g red onion, sweet pepper, and mild red chili for 3 to 4 minutes.

  4. 4

    4. Add the guava, the remaining orange juice, the remaining lime juice, apple cider vinegar, brown sugar, half of the fresh thyme, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 8 to 10 minutes, stirring, until you have a thick glossy sauce with soft guava pieces. Keep warm.

  5. 5

    5. Remove the steak from the marinade and lightly pat the surface dry. Heat a large skillet or grill pan over medium-high heat with 15 ml (1 tbsp) olive oil. Sear the steak for 4 to 5 minutes per side for medium. If you prefer to finish it in the oven, transfer it to a preheated oven at 400°F (200°C) for 4 to 6 more minutes, until desired doneness.

  6. 6

    6. Remove the steak and let it rest for 8 minutes. Then slice it thinly against the grain and toss it with 2 to 3 tablespoons of the guava mojo to keep it juicy.

  7. 7

    7. Drain the cooked malanga and mash it while hot with the butter, 15 ml (1 tbsp) olive oil, the remaining fresh thyme, 1/4 teaspoon salt, and a little black pepper. If needed, add 1 to 2 tablespoons of the cooking water to achieve a smooth but sturdy fufu texture.

  8. 8

    8. In a bowl, combine the watercress and cucumber. Dress with the honey, 15 ml (1 tbsp) olive oil, and a pinch of salt and black pepper. Toss just before serving.

  9. 9

    9. Serve a base of malanga fufu on each plate, arrange the sliced steak on top, spoon over the remaining guava mojo, and finish with the watercress cucumber salad on the side.

Chef tips

For juicier steak, do not cook it straight from the refrigerator; let it lose some of its chill for a few minutes before searing. If your guava has many seeds, you can strain the mojo through a coarse sieve and return the pulp to the skillet.

Substitutions

You can substitute malanga with cassava or tannia, adjusting the cooking water as needed. The honey can be replaced with a little more brown sugar. If watercress is unavailable, use arugula or baby spinach.
