Instructions

  1. 1

In a large bowl, combine the brewed coffee, orange juice, lime juice, garlic, oregano, cumin, 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 tablespoons olive oil. Add the beef steaks and half of the onion. Toss well, cover, and marinate in the refrigerator for 20 minutes.

  2. 2

While the beef marinates, place the white rice in a medium saucepan with the water, bay leaf, 1/4 teaspoon salt, and 1 tablespoon olive oil. Bring to a boil over medium-high heat, then reduce to very low, cover, and cook for 15 to 18 minutes until the liquid is absorbed.

  3. 3

Remove the rice from the heat and let it rest, covered, for 5 minutes. Discard the bay leaf, add half of the chopped cilantro, and fluff the rice with a fork.

  4. 4

Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the remaining onion and the squash. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for 10 to 12 minutes, stirring occasionally, until the squash is tender and lightly browned at the edges.

  5. 5

Add the white wine vinegar to the sautéed squash and cook 1 more minute so it reduces slightly. Keep warm.

  6. 6

Remove the steaks from the marinade and let the excess drip off. Strain and reserve the marinade together with the marinated onions.

  7. 7

Heat the remaining 1 tablespoon olive oil in a wide skillet or griddle over medium-high heat. Once hot, cook the steaks for 2 to 3 minutes per side, until browned and cooked to your preferred doneness. For an internal temperature reference, cook to 145°F (63°C) for medium.

  8. 8

Transfer the steaks to a plate and let them rest for 5 minutes. In the same skillet, add the strained marinade and the marinated onions. Cook for 3 to 5 minutes over medium heat, stirring, until the sauce reduces slightly and the onions soften.

  9. 9

Serve each portion with cilantro rice, sautéed squash, and steak. Spoon the coffee-orange sauce and onions over the top, and finish with the remaining fresh cilantro.

  10. 10

If you want to keep the steaks warm before serving, place them in a 200°F (95°C) oven for a few minutes while you finish the sauce.

Chef tips

For deeper flavor, marinate the meat for up to 1 hour. Use a very hot skillet to quickly sear the steak without drying it out. Cut the squash into small cubes so it cooks at the same pace as the onion.

Substitutions

You can substitute the squash with sweet potato or sautéed cassava. Cilantro can be replaced with parsley for a milder flavor. If you do not have white wine vinegar, use the same amount of extra lime juice.
