Instructions

  1. 1

    1. Rinse the jasmine rice under cold water until the water runs almost clear. Place it in a saucepan with 480 ml (2 cups) water and a pinch of salt. Bring to a boil, cover, reduce to very low heat, and cook for 12 minutes. Remove from the heat and let it rest, covered, for 10 minutes.

  2. 2

    2. While the rice cooks, make the glaze. Blend the cooked beet with the white miso, soy sauce, honey, 15 ml (1 tbsp) rice vinegar, grated ginger, 2 grated garlic cloves, 5 ml (1 tsp) sesame oil, 15 ml (1 tbsp) water, black pepper, and the finely grated zest of the lime until smooth.

  3. 3

    3. Pat the chicken dry, season lightly with a pinch of salt, and toss it with half of the beet miso glaze. Let it marinate for 10 minutes in a cool spot.

  4. 4

    4. In a bowl, combine the cucumber with 15 ml (1 tbsp) lime juice, 15 ml (1 tbsp) rice vinegar, 5 ml (1 tsp) sesame oil, half of the sesame seeds, and a pinch of salt. Set aside so the flavors can develop.

  5. 5

    5. Heat a large skillet or wok over medium-high heat. Add 15 ml (1 tbsp) vegetable oil and cook the marinated chicken for 6 to 8 minutes, stirring, until browned and fully cooked. The thickest part should reach 74°C/165°F.

  6. 6

    6. Lower the heat to medium, add the remaining glaze to the skillet, and cook for 1 to 2 minutes more, stirring, until the chicken is glossy and fully lacquered. Transfer the chicken to a plate and keep warm.

  7. 7

    7. In the same skillet, add the remaining 15 ml (1 tbsp) vegetable oil. Add the napa cabbage, the remaining chopped garlic clove, half of the scallions, and a pinch of salt. Stir-fry for 3 to 4 minutes until the cabbage is tender but still slightly crisp.

  8. 8

    8. Fluff the rice with a fork. Divide the rice among 4 bowls and top with the stir-fried cabbage, glazed chicken, and dressed cucumber.

  9. 9

    9. Finish each bowl with the remaining scallions, the rest of the sesame seeds, and a few drops of the remaining lime juice. Serve immediately.

Chef tips

For a deeper glaze color, use well-cooked, concentrated beet and blend it until completely smooth. If you want a more caramelized finish, leave the chicken 30 extra seconds per side before adding the remaining sauce.

Substitutions

You can swap napa cabbage for bok choy or tender kale. Honey can be replaced with maple syrup, though the flavor will be less floral. If you prefer brown rice, adjust the cooking time according to the package instructions.
