Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 10 minutes to prevent burning. Preheat a grill, grill pan, or oven to 425°F / 220°C.

  2. 2

    2. In a large bowl, combine 2 tablespoons (30 ml) olive oil, 3 tablespoons (45 ml) lime juice, 3 minced garlic cloves, thyme, smoked paprika, cumin, cinnamon, 3/4 teaspoon (4 g) salt, and black pepper.

  3. 3

    3. Add the fish cubes to the marinade and toss gently to coat well. Let rest for 10 minutes while you prepare the remaining ingredients.

  4. 4

    4. Thread the marinated fish, pineapple, red onion, and red bell pepper onto skewers, alternating ingredients until everything is used.

  5. 5

    5. For the mojo, place the coconut milk, 1 tablespoon (15 ml) lime juice, 1 tablespoon (15 ml) olive oil, 1 minced garlic clove, grated ginger, red chili, honey, 1/4 teaspoon (2 g) salt, and cilantro in a small saucepan. Cook over low heat for 3 to 4 minutes without boiling hard, until the sauce is fragrant and lightly blended.

  6. 6

    6. Cook the skewers on the grill or grill pan for 3 to 4 minutes per side, or bake them for 10 to 12 minutes at 425°F / 220°C, turning halfway through. The fish should be opaque and cooked through, and the pineapple lightly caramelized.

  7. 7

    7. Remove the skewers and let them rest for 2 minutes. Serve hot with the coconut lime mojo spooned over or on the side.

  8. 8

    8. Taste and adjust with extra salt or lime juice if desired before serving.

Chef tips

For better texture, pat the fish dry well before marinating. If using the oven, place the skewers on a rack or lined tray for better browning. The mojo also works beautifully as a sauce for white rice or roasted cassava.

Substitutions

You can substitute the white fish with firm salmon for a richer flavor, though it will change the dish profile. Honey may be replaced with agave syrup. If you do not have cilantro, use fresh parsley, and if fresh pineapple is unavailable, use firm mango cubes.
