Instructions

  1. 1

    1. Preheat the oven to 375°F / 190°C. Lightly grease a baking dish about 23 x 33 cm (9 x 13 inches) with 1 teaspoon olive oil.

  2. 2

    2. Place the cassava in a large pot, cover with water, and add 1 teaspoon salt. Bring to a boil, reduce to medium heat, and cook for 25 to 30 minutes until very tender. Drain well and remove any tough inner fibers.

  3. 3

    3. While the cassava cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the onion, cubanelle pepper, and garlic. Cook for 4 to 5 minutes until softened.

  4. 4

    4. Stir in the Puerto Rican sofrito and cook 2 minutes more until fragrant. Add the ground turkey and cook for 6 to 8 minutes, breaking it up with a spoon, until no longer pink.

  5. 5

    5. Add the tomato paste, dried oregano, ground cumin, the remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well. Stir in the olives, pigeon peas, and chicken broth or water. Cook for 6 to 8 minutes until the filling is moist but not watery. Turn off the heat and mix in the fresh cilantro.

  6. 6

    6. Place the hot cassava in a large bowl and mash it with the butter, warm milk, and the remaining 1/4 teaspoon black pepper until thick and rustic. Adjust salt if needed.

  7. 7

    7. Spread half of the mashed cassava in the greased baking dish. Evenly layer the turkey and pigeon pea filling on top. Cover with the remaining cassava and smooth the surface with a spoon.

  8. 8

    8. Combine the grated queso del país with the breadcrumbs and sweet paprika. Sprinkle this mixture evenly over the casserole.

  9. 9

    9. Bake for 20 to 25 minutes at 375°F / 190°C until heated through and golden on top. For extra color, broil 2 to 3 additional minutes, watching closely.

  10. 10

    10. Let rest for 10 minutes before serving so the casserole sets and slices more cleanly.

Chef tips

If the cassava feels too dry while mashing, add 1 or 2 extra tablespoons of warm milk. For a crispier crust, lightly drizzle the top with a little olive oil before baking.

Substitutions

You can substitute ground chicken for the ground turkey. If queso del país is unavailable, use a mild semi-firm melting cheese. The cilantro can be replaced with chopped recao for a more traditional flavor profile.
