Instructions

  1. 1

Pat the pork shoulder dry with paper towels and season all over with the salt, black pepper, smoked paprika, cumin, and dried oregano.

  2. 2

Heat a large skillet over medium-high heat for 2 to 3 minutes. Add the olive oil and brown the pork in batches for 2 to 3 minutes per side, until nicely colored. It does not need to cook through. Transfer the pork to the slow cooker.

  3. 3

In the same skillet, add the yellow onion and cook for 3 minutes, stirring. Add the garlic and cook 30 seconds more. Stir in the tomato puree, Dijon mustard, apple cider vinegar, and chicken broth; scrape up the browned bits and cook for 1 minute.

  4. 4

Pour the skillet mixture over the pork in the slow cooker. Add the bay leaves and arrange the peach wedges on top.

  5. 5

Cover and cook on LOW for 7 hours, or until the pork is very tender and shreds easily. If your model allows specific temperature settings, this usually corresponds to about 190-200°F (88-93°C) inside the cooker. Avoid opening the lid during cooking.

  6. 6

Uncover, remove the bay leaves, and shred the pork with two forks directly in the sauce. Add the cooked white beans, stir well, and cover again.

  7. 7

Cook for 20 minutes more on HIGH to heat the beans through. In many models, HIGH typically runs around 250-300°F (121-149°C) inside the cooker.

  8. 8

Taste and adjust with more salt and pepper if needed. Serve hot with the fresh parsley on top.

  9. 9

If you want a thicker sauce, transfer the contents to a wide saucepan and cook over medium heat for 5 to 8 minutes, stirring, until slightly reduced. The mixture will reach a gentle simmer close to 212°F (100°C).

Chef tips

For deeper flavor, brown the pork well without crowding the pan. Use firm peaches so they keep some texture after slow cooking.

Substitutions

You can substitute pork neck or another well-marbled pork cut for the shoulder. Peaches can be swapped for nectarines. White beans can be replaced with cooked cannellini or other large white beans.
