Instructions

  1. 1

    1. Season the pork shoulder all over with the salt and black pepper.

  2. 2

    2. Heat a large skillet over medium-high heat and add the olive oil. Brown the pork shoulder for 2 to 3 minutes per side until it develops color. It does not need to cook through.

  3. 3

    3. Transfer the meat to the slow cooker. Add the yellow onion, garlic, diced pineapple, chipotle in adobo, chicken broth, apple cider vinegar, tomato paste, smoked paprika, ground cumin, dried oregano, and brown sugar around and over the meat.

  4. 4

    4. Cover and cook on LOW for 7 hours, or until the pork is very tender and pulls apart easily. If your model allows temperature indication, LOW is usually around 190-200 °F / 88-93 °C inside the pot. On HIGH, cook for about 4 hours at approximately 300 °F / 149 °C, watching so it does not dry out.

  5. 5

    5. Remove the pork shoulder and place it on a tray or in a large bowl. Shred it with two forks, removing excess visible fat if desired.

  6. 6

    6. Meanwhile, lightly mash some of the pineapple and onion in the cooker with a spoon or hand masher to better blend the sauce. Return the shredded pork to the slow cooker and mix well with the sauce.

  7. 7

    7. Add the lime zest, lime juice, and fresh cilantro. Stir, taste, and adjust salt if needed. Cook 10 more minutes on HIGH so the flavors come together, about 300 °F / 149 °C.

  8. 8

    8. Serve hot with some of the sauce spooned over the top.

Chef tips

For deeper flavor, brown the meat well before slow cooking. If you want a thicker sauce, leave the slow cooker uncovered for the last 15 to 20 minutes on HIGH. You can also let the meat rest for 5 minutes before mixing it back into the sauce.

Substitutions

You can substitute pork shoulder with pork neck or blade roast. Cilantro can be replaced with fresh parsley, and lime with lemon. If you prefer less heat, use only 1 tablespoon of chipotle in adobo.
