Instructions

  1. 1

    1. Season the cubed pork shoulder with the salt and black pepper.

  2. 2

    2. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and brown the pork in batches for 6 to 8 minutes, until nicely colored. Transfer the browned pork to the slow cooker.

  3. 3

    3. In the same skillet, add the remaining 1 tablespoon olive oil, the yellow onion, and the garlic. Cook for 3 minutes, stirring, until the onion begins to soften.

  4. 4

    4. Add the dry white wine and scrape the bottom of the skillet to release the caramelized bits. Cook for 2 minutes. Stir in the chicken broth, Dijon mustard, fresh sage, fresh thyme, and bay leaf, and mix well.

  5. 5

    5. Pour this sauce over the pork in the slow cooker. Cover and cook on LOW for 5 hours at low setting, about 190 to 200 °F / 88 to 93 °C, or on HIGH for 3 hours at high setting, about 280 to 300 °F / 138 to 149 °C.

  6. 6

    6. Open the slow cooker, add the cauliflower and apple, stirring gently so they are coated in the sauce. Cover again and cook for 1 more hour on LOW, about 190 to 200 °F / 88 to 93 °C, or 45 to 60 minutes more on HIGH, about 280 to 300 °F / 138 to 149 °C, until the pork is tender and the cauliflower is cooked but not falling apart.

  7. 7

    7. Remove the bay leaf. Mix the cornstarch with the water until smooth. Stir it into the slow cooker and cook 10 minutes more on HIGH, about 280 to 300 °F / 138 to 149 °C, until the sauce thickens slightly.

  8. 8

    8. Adjust salt if needed, sprinkle with the fresh parsley, and serve hot with some of the sauce over each portion.

Chef tips

For deeper flavor, brown the pork well without crowding the pan. Add the cauliflower near the end so it keeps its texture and does not fall apart.

Substitutions

You can swap pork shoulder for pork loin, though it will be less rich. The apple can be replaced with firm pear. If you do not want to use wine, replace it with the same amount of extra broth plus 1 teaspoon of lemon juice.
