Instructions

  1. 1

    1. Season the pork shoulder with the salt, black pepper, and red pepper flakes if using.

  2. 2

    2. For deeper flavor, heat a large skillet over medium-high heat and add the olive oil. Brown the pork in batches for 2 to 3 minutes per side until colored. The pan will be about 350°F / 175°C. This step is optional but recommended.

  3. 3

    3. Place the onion, garlic, and turnip in the slow cooker. Arrange the browned or raw pork on top, then add the yellow apple wedges.

  4. 4

    4. Stir the broth with 1 tablespoon of the rice vinegar and half of the fresh thyme. Pour this mixture over the ingredients in the slow cooker.

  5. 5

    5. Cover and cook on LOW for 6 hours, or until the pork is very tender. In most slow cookers, LOW is approximately 190°F to 200°F / 88°C to 93°C.

  6. 6

    6. When about 20 minutes remain, carefully remove 120 ml (1/2 cup) of the hot cooking liquid and whisk it in a bowl with the white miso, the remaining 1 tablespoon rice vinegar, and the rest of the thyme until smooth.

  7. 7

    7. Return that miso mixture to the slow cooker and gently stir to coat the pork, turnip, and apple without breaking them up too much.

  8. 8

    8. Add the cornstarch mixed with the water and stir gently. Cook for 15 to 20 minutes more on HIGH so the sauce becomes glossy and lightly thickened. In most slow cookers, HIGH is approximately 250°F to 300°F / 120°C to 150°C.

  9. 9

    9. Taste and adjust salt if needed. Serve hot, finishing with a few extra fresh thyme leaves on top.

Chef tips

If you prefer a looser sauce, skip the cornstarch. For a more caramelized finish, you can place the cooked pork under the oven broiler for 3 to 4 minutes at 450°F / 230°C before serving, while reducing the sauce separately.

Substitutions

You can swap the turnip for rutabaga or daikon. Yellow apple can be replaced with Fuji apple. If you do not have fresh thyme, use 1 teaspoon dried thyme. For a soy-free version, replace the miso with 2 tablespoons tahini and 1 extra teaspoon salt, though the flavor will change.
