Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a 24 to 26 cm ring or Bundt-style pan with a little of the melted butter.
- 2
In a large bowl, toss the potato slices with 30 g melted butter, 1 tablespoon olive oil, 4 g salt, 1 g black pepper, and the nutmeg. Set aside.
- 3
Heat a large skillet over medium heat. Add the remaining butter and the remaining tablespoon of olive oil. Add the leek and shallot and cook for 5 minutes until softened.
- 4
Add the garlic, mixed mushrooms, and half of the thyme. Cook for 8 to 10 minutes, stirring, until the mushrooms release their moisture and lightly brown.
- 5
Pour in the dry white wine and cook for 2 to 3 minutes until almost fully reduced. Add the heavy cream, 25 g Parmesan, 3 g salt, and the remaining black pepper. Cook 2 minutes more until you have a creamy but thick ragout. Remove from the heat.
- 6
In a small bowl, mix together the walnuts, breadcrumbs, sweet paprika, the remaining thyme, parsley, and the remaining 25 g Parmesan.
- 7
Build the wreath base by arranging half of the potatoes in the pan, overlapping the slices in tight circles and pressing them to create an even layer on the bottom and sides.
- 8
Spread the mushroom ragout evenly over the potatoes. Scatter the taleggio pieces on top and cover with the remaining potatoes, pressing gently to compact the wreath.
- 9
Cover the pan with foil and bake for 35 minutes at 200 °C / 400 °F. Remove the foil, sprinkle the walnut breadcrumb mixture over the top, and continue baking for 25 to 30 minutes more, until the potatoes are tender and the top is deeply golden.
- 10
Let the wreath rest for 10 minutes out of the oven. Run a knife around the edges, carefully unmold onto a serving platter, and serve hot.
- 11
For an extra crisp finish, broil for 2 to 3 minutes at the end, watching closely, keeping the oven at 200 °C / 400 °F or using the broiler setting depending on your oven.
Chef tips
Slice the potatoes as thinly and evenly as possible, ideally with a mandoline, so the wreath holds together well. If the mushrooms release a lot of moisture, cook them a few extra minutes before adding the cream.
Substitutions
You can replace the taleggio with fontina or low-moisture mozzarella. Walnuts can be swapped for hazelnuts or almonds if you prefer a different flavor profile. For an alcohol-free version, replace the white wine with vegetable stock.
