Instructions

  1. 1

    1. In a bowl, combine the beef with 4 g (3/4 tsp) salt, black pepper, garlic powder, sweet paprika, and ground cinnamon until all the cubes are evenly coated.

  2. 2

    2. Heat a large pot or deep skillet over medium-high heat. Add 15 ml (1 tbsp) vegetable oil and brown the beef in batches for 6 to 8 minutes, turning to sear several sides. Remove and set aside.

  3. 3

    3. In the same pot, add the remaining 15 ml (1 tbsp) vegetable oil. Add the yellow onion, red bell pepper, and green bell pepper; cook for 5 minutes until softened. Add the fresh garlic and fresh ginger and cook 1 minute more.

  4. 4

    4. Add the crushed tomato, tomato paste, fresh thyme, bay leaf, brown sugar, and 15 ml (1 tbsp) of the lime juice. Cook for 2 minutes, stirring to combine well.

  5. 5

    5. Return the beef to the pot. Pour in the beef broth and coconut milk, stir, partially cover, and cook over low heat for 40 minutes, stirring once or twice, until the meat is tender.

  6. 6

    6. Meanwhile, make the rice. Place the long-grain rice and water in a medium saucepan with 2 g (1/4 tsp) salt. Bring to a boil, reduce the heat, cover, and cook for 15 minutes. Remove from the heat and let stand, covered, for 5 minutes.

  7. 7

    7. Uncover the rice and fluff it with the butter, lime zest, 15 ml (1 tbsp) lime juice, and half of the fresh cilantro until fragrant and separated.

  8. 8

    8. Once the beef is tender, add the okra to the stew and cook uncovered for 8 to 10 minutes more, until tender but still green. Adjust with the remaining 2 g (1/4 tsp) salt if needed and remove the bay leaf.

  9. 9

    9. For the plantain, heat a large skillet over medium heat. Add the honey and the ripe plantain slices. Cook for 2 to 3 minutes per side until golden and glossy. If preferred, you can also warm them on a tray at 400 °F / 200 °C for 8 to 10 minutes.

  10. 10

    10. Serve the lime rice on each plate, spoon the beef stew with its sauce over or beside it, add the golden plantain, and finish with the remaining fresh cilantro.

  11. 11

    11. If you want to reheat the full dish, do so covered in the oven at 325 °F / 165 °C for 10 to 15 minutes, or until fully hot.

Chef tips

Brown the beef well without overcrowding the pot to build flavor. If the stew thickens too much, add a little more broth or water. Add the okra near the end so it keeps a better texture.

Substitutions

You can substitute the beef with boneless chicken thighs, reducing the cooking time to about 30 minutes. Cilantro can be replaced with fresh parsley. If you do not have ripe plantain, use roasted sweet potato slices as the side.
