Instructions

1. In a bowl, whisk together the white miso, maple syrup, 2 tablespoons (30 ml) soy sauce, 1 tablespoon (15 ml) rice vinegar, 2 teaspoons (10 ml) sesame oil, half of the grated ginger, half of the minced garlic, and the water until smooth. Set aside.
- 2
2. Place the smashed cucumber in another bowl with the remaining 1 tablespoon (15 ml) rice vinegar, 1 tablespoon (15 ml) soy sauce, 1 teaspoon (5 ml) sesame oil, half of the sesame seeds, and the red pepper flakes if using. Toss and let it sit while you cook the rest.
- 3
3. Cook the ramen noodles according to package directions until just tender, usually 2 to 3 minutes in boiling water at 212°F and 100°C. Drain, briefly rinse with warm water to stop the cooking, and toss with a little vegetable oil to prevent sticking.
- 4
4. Pat the pork loin strips very dry with paper towels. Heat a large skillet or wok over medium-high heat for 1 to 2 minutes. Add 1 tablespoon (15 ml) vegetable oil and stir-fry the pork for 4 to 5 minutes until browned and it reaches a safe internal temperature of 145°F and 63°C. Transfer to a plate.
- 5
5. In the same pan, add the broccolini, the remaining ginger, and the remaining garlic. Stir-fry for 3 to 4 minutes, adding a splash of water if needed, until crisp-tender and bright green. Remove with the pork.
- 6
6. Reduce to medium heat, add the remaining vegetable oil, and add the drained ramen noodles. Stir-fry for 1 minute so they dry slightly and begin to brown in a few spots.
- 7
7. Return the pork and broccolini to the pan. Pour in the reserved maple miso sauce and toss for 2 to 3 minutes until the pork and noodles are evenly glazed and glossy.
- 8
8. Divide the noodles among bowls or plates. Top with the scallions and the remaining sesame seeds. Serve immediately with the smashed cucumber on the side or over the top.
- 9
9. If you want to keep the dish warm before serving, you can hold it covered in an oven at 200°F and 95°C for up to 10 minutes without overcooking the noodles.
Chef tips
For crisper pork, do not overcrowd the pan and cook in two batches if needed. Smashed cucumber absorbs the dressing better than evenly sliced cucumber.
Substitutions
You can substitute the pork loin with chicken breast or firm tofu. Broccolini can be replaced with bok choy or tender broccoli. If you do not have maple syrup, use honey, keeping in mind the flavor will be different.
