Instructions

  1. 1

    1. Bring a medium pot of water to a boil over high heat. No exact temperature is needed for stovetop boiling. Cook the soba noodles according to the package, usually 4 to 5 minutes, until tender. Drain, rinse under cold water, and toss with 1 teaspoon (5 ml) of the sesame oil so they do not stick.

  2. 2

    2. While the noodles cook, in a bowl whisk together the soy sauce, peanut butter, lime juice, honey, ginger, garlic, water, and red pepper flakes if using, until smooth.

  3. 3

    3. Season the chicken strips with the salt, black pepper, and half of the remaining sesame oil.

  4. 4

    4. Heat a large skillet or wok over medium-high heat for 1 minute. Add the neutral oil and cook the chicken for 5 to 6 minutes, stirring, until fully cooked and it reaches an internal temperature of 165°F/74°C.

  5. 5

    5. Add half of the scallions to the skillet and cook for 30 seconds until fragrant.

  6. 6

    6. Add the cooked noodles and the sauce. Toss for 1 to 2 minutes over medium heat until everything is evenly coated and glossy.

  7. 7

    7. Remove from the heat and add the cucumber, orange segments, and the remaining scallions. Toss gently to keep the cucumber and orange fresh and textured.

  8. 8

    8. Serve immediately and finish with the sesame seeds on top.

Chef tips

For better texture, cool the noodles well after boiling and add them to the skillet well drained. If you prefer it saucier, add 1 to 2 extra tablespoons of water before serving.

Substitutions

You can swap the chicken for turkey strips or firm tofu. Peanut butter can be replaced with tahini, though the flavor will change and sesame will still be present. The orange can be replaced with mandarin.
