Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Place the zucchini on a sheet pan, toss with 1 tbsp olive oil, 1/4 tsp salt, and a little black pepper. Roast for 18 minutes, stirring halfway through, until golden around the edges.
- 2
Meanwhile, bring a large pot of water to a boil and cook the orzo 2 minutes less than the package directions. Drain and set aside with a small drizzle of olive oil so it does not stick.
- 3
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the ground turkey, half of the fresh rosemary, 1/2 tsp salt, black pepper, and red pepper flakes if using. Cook for 6 to 8 minutes, breaking up the meat, until no longer pink. Transfer the turkey to a plate.
- 4
In the same skillet, add the remaining 1 tbsp olive oil and cook the onion for 4 minutes. Stir in the garlic and cook 30 seconds more.
- 5
Reduce the heat to medium. Add the butter and, once melted, stir in the all-purpose flour. Cook for 1 minute, stirring, to create a smooth base.
- 6
Gradually pour in the chicken broth and milk, whisking to prevent lumps. Cook for 3 to 4 minutes until the sauce thickens slightly.
- 7
Remove the skillet from the heat and add the ricotta, lemon zest, 2 tbsp lemon juice, and half of the Parmesan. Mix until smooth and creamy.
- 8
Fold the cooked orzo, turkey, roasted zucchini, and half of the mozzarella into the sauce. Taste and adjust with the remaining salt if needed.
- 9
Transfer the mixture to a baking dish about 9 x 13 inches. In a bowl, combine the breadcrumbs with the remaining mozzarella, the remaining Parmesan, and the rest of the rosemary. Sprinkle this topping evenly over the casserole.
- 10
Bake at 190 °C / 375 °F for 22 to 25 minutes, until bubbling and golden on top. For extra color, broil for 1 to 2 additional minutes, watching closely.
- 11
Let rest for 8 minutes before serving and finish with the fresh parsley on top.
Chef tips
For the best texture, do not overcook the orzo before baking. If the zucchini releases a lot of moisture, let it sit on the pan for 2 minutes before mixing it into the pasta.
Substitutions
You can swap the turkey for ground chicken. Rosemary can be replaced with fresh thyme. If you do not have ricotta, use well-drained cottage cheese blended until smooth. For a meatless version, replace the turkey with sautéed cooked chickpeas.
