Instructions

  1. 1

    1. Bring a large pot of water with a pinch of salt to a boil at 212°F/100°C. Meanwhile, heat a large skillet over medium heat and add 1 tbsp olive oil and the butter.

  2. 2

    2. Add the breadcrumbs and half of the lemon zest to the skillet. Cook for 2 to 3 minutes, stirring, until golden and crisp. Transfer to a plate.

  3. 3

    3. In the same skillet, add the remaining olive oil and the halloumi. Cook over medium-high heat for 3 to 4 minutes, turning the cubes, until golden on several sides. Remove and set aside.

  4. 4

    4. Reduce to medium heat, add the shallot, and cook for 2 minutes until softened. Stir in the garlic and cook 30 seconds more.

  5. 5

    5. Add the peas, vegetable broth, cream, salt, and black pepper. Cook for 3 minutes until the peas are tender. Lightly mash in the skillet with a masher or fork to create a textured sauce. Stir in the chopped mint, lemon juice, and remaining lemon zest.

  6. 6

    6. Cook the gnocchi in the boiling water at 212°F/100°C according to package directions, usually 2 to 3 minutes, until they float. Reserve 60 ml / 1/4 cup of the cooking water and drain the gnocchi.

  7. 7

    7. Add the gnocchi to the skillet with the pea sauce and toss for 1 to 2 minutes over medium heat. If needed, add a little of the reserved cooking water to loosen the sauce.

  8. 8

    8. Serve the gnocchi topped with the golden halloumi and crispy lemon breadcrumbs. Adjust salt and black pepper before serving.

Chef tips

For extra texture, pan-sear the gnocchi for 1 minute in a separate skillet after boiling. Add the mint at the end to keep its aroma fresh.

Substitutions

You can substitute halloumi with firm panela cheese or oven-baked feta. Mint can be swapped for basil, and the cream can be replaced with plant-based cream for a dairy-free variation, though allergens will change.
