Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Lightly grease a large baking dish with a little of the olive oil.

  2. 2

    2. Place the Roma tomatoes on a tray and toss them with 1 tablespoon olive oil, a pinch of salt, black pepper, and the dried oregano. Roast at 220°C / 425°F for 20 minutes, until concentrated and juicy. Set aside.

  3. 3

    3. Meanwhile, cook the pasta in salted water until just al dente, 1 to 2 minutes less than the package directions. Drain and set aside.

  4. 4

    4. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the yellow onion and cook for 4 minutes until softened. Stir in the garlic and cook for 30 seconds.

  5. 5

    5. Add the ground turkey, sweet paprika, red pepper flakes if using, the remaining salt, and black pepper. Cook for 6 to 8 minutes, breaking it up, until the turkey is no longer pink.

  6. 6

    6. Add the zucchini and cook for 3 minutes so it softens slightly. Stir in the tomato paste and cook for 1 minute, mixing well.

  7. 7

    7. Pour in the chicken broth and cooking cream. Add the roasted tomatoes with their juices and gently crush them with the spoon. Simmer for 3 minutes over low heat until the sauce is thick yet creamy.

  8. 8

    8. In a bowl, mix the ricotta, egg, half of the Parmesan cheese, half of the fresh rosemary, and a pinch of black pepper until smooth.

  9. 9

    9. Combine the cooked pasta with the turkey and vegetable sauce. Transfer everything to the baking dish and spread evenly.

  10. 10

    10. Spoon the ricotta mixture over the top. Then cover with the shredded mozzarella, the remaining Parmesan cheese, the breadcrumbs, and the rest of the fresh rosemary.

  11. 11

    11. Bake at 200°C / 400°F for 22 to 25 minutes, until bubbling and golden on top. For deeper color, broil for 2 more minutes, watching closely.

  12. 12

    12. Let rest for 10 minutes before serving. Finish with the fresh parsley on top and serve hot.

Chef tips

For the best texture, do not overcook the pasta before baking. Roasting the tomatoes first deepens the flavor and keeps the sauce from becoming watery.

Substitutions

You can use ground chicken instead of turkey. Zucchini can be replaced with small diced eggplant. Mozzarella can be swapped for fontina or another good melting cheese.
