Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking dish about 9 x 13 inches with a little of the olive oil.

  2. 2

    2. Cook the potatoes in water with a pinch of the salt for 15 to 18 minutes, until very tender. Drain well and mash with the butter, a little black pepper, and 20 g of the all-purpose flour. Let cool for 5 minutes.

  3. 3

    3. Stir the beaten egg into the mashed potatoes until you have a thick mixture. Shape into 12 small flat patties. Lightly coat them with the remaining all-purpose flour so they hold their shape better.

  4. 4

    4. Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Brown the potato patties for 2 to 3 minutes per side, in batches, until lightly crusted. Set aside.

  5. 5

    5. In the same skillet, add the remaining tablespoon of olive oil. Sauté the onion for 4 minutes. Add the garlic and cook 30 seconds more.

  6. 6

    6. Add the chicken breast, sweet paprika, dried thyme, the rest of the salt, and the rest of the black pepper. Cook for 5 to 6 minutes, stirring, until the chicken is no longer raw on the outside.

  7. 7

    7. Add the sweet corn and chicken broth. Cook for 3 minutes so the flavors combine and the liquid reduces slightly.

  8. 8

    8. Pour in the heavy cream and half of the chives. Cook over low heat for 2 to 3 minutes, until you have a light creamy sauce. Turn off the heat and stir in 40 g of the shredded mozzarella.

  9. 9

    9. Assemble the bake in the dish: spread the creamy chicken and corn mixture on the bottom. Arrange the potato patties on top in a single layer, covering most of the surface.

  10. 10

    10. Mix the remaining shredded mozzarella with the breadcrumbs and sprinkle over the top. Bake for 20 to 25 minutes at 200 °C / 400 °F, until bubbling and golden on top.

  11. 11

    11. Switch the oven to broil if desired and brown for 2 to 3 minutes more, watching closely. Remove from the oven and let rest for 8 minutes.

  12. 12

    12. Finish with the remaining chives before serving hot.

Chef tips

For a crispier top layer, make sure the potato patties are well browned in the skillet before assembling. If the sauce thickens too much, add 2 to 3 extra tablespoons of chicken broth.

Substitutions

You can use boneless chicken thighs instead of breast. Chives can be replaced with parsley or the green part of scallions. Mozzarella can be swapped for another good melting cheese such as Monterey Jack or mild Gouda.
