Instructions

  1. 1

    1. Season the turkey chunks with the salt, black pepper, smoked paprika, dried oregano, and ground cumin.

  2. 2

    2. Heat a large skillet over medium-high heat and add the olive oil. Brown the turkey for 4-5 minutes, turning to sear several sides. It does not need to cook through.

  3. 3

    3. Transfer the browned turkey to the slow cooker. Add the yellow onion, garlic, red bell pepper, crushed tomatoes, broth, bay leaves, and red wine vinegar. Mix well.

  4. 4

    4. Cover and cook on LOW for 5 hours. If your cooker has a temperature setting, keep it at a gentle simmer around 200-210 °F (93-99 °C).

  5. 5

    5. Uncover, add the zucchini and black olives, stir gently, and cover again. Cook on LOW for 45-60 minutes more, until the zucchini is tender but not falling apart and the turkey is very soft.

  6. 6

    6. Remove the bay leaves. Taste the sauce and adjust with more salt and black pepper if needed.

  7. 7

    7. Turn off the slow cooker and let the dish rest for 5 minutes. Serve the turkey with its sauce and finish with the chopped fresh parsley on top.

Chef tips

For a thicker sauce, leave the cooker uncovered for the last 20 minutes. If you want deeper flavor, brown the onion and red bell pepper before adding them to the slow cooker.

Substitutions

You can use boneless chicken thighs instead of turkey with a similar cooking time. Red bell pepper can be replaced with yellow pepper, and parsley with cilantro for a different finish. For a milder version, slightly reduce the smoked paprika.
