Instructions

  1. 1

    1. Place the cubed turkey in the base of the slow cooker. Add the delicata squash, green beans, red onion, and garlic around and over the turkey.

  2. 2

    2. In a bowl, whisk together the broth, Dijon mustard, maple syrup, olive oil, fresh sage, apple cider vinegar, salt, and black pepper until the sauce is smooth.

  3. 3

    3. Pour the sauce over the turkey and vegetables. Cover and cook on LOW for 5 hours, or on HIGH for 2 1/2 to 3 hours, until the turkey is tender and reaches a safe internal temperature of 165°F/74°C.

  4. 4

    4. When cooking is done, stir the cornstarch with the cold water in a small cup until smooth. Add this mixture to the slow cooker and stir gently so the delicata squash does not break apart too much.

  5. 5

    5. Cover again and cook for 15 to 20 minutes more on HIGH, until the sauce lightly thickens. Taste and adjust with more salt and pepper if needed.

  6. 6

    6. Serve hot, making sure each portion gets turkey, delicata squash, green beans, and red onion with plenty of sauce spooned over the top.

Chef tips

If you want the green beans to stay firmer, add them during the last 60 minutes of cooking. Delicata squash does not need peeling if the skin is tender and well washed.

Substitutions

You can replace delicata squash with cubed butternut squash, and fresh sage with 1 teaspoon dried sage. For a mustard-free version, use the same amount of unsweetened applesauce and add a few extra drops of apple cider vinegar.
