Instructions

  1. 1

Preheat the oven to 220°C / 425°F. Place the lemon slices and one lemon half on a small tray, brush with 1 teaspoon of the olive oil, and roast for 10 to 12 minutes until lightly browned. Set aside and let cool slightly.

  2. 2

Season the turkey pieces with the salt, black pepper, and red pepper flakes if using.

  3. 3

Heat a large skillet over medium-high heat. Add 1 tablespoon of the olive oil and brown the turkey for 3 to 4 minutes per side, without cooking it through. Transfer the turkey to the slow cooker.

  4. 4

In the same skillet, add the remaining tablespoon of olive oil. Add the onion, fennel, and garlic, and cook for 4 minutes, stirring, until they begin to soften. Transfer this mixture to the slow cooker.

  5. 5

Add the chicken broth, white beans, thyme, rosemary, and roasted lemon slices to the slow cooker. Cover and cook on LOW for 6 hours, until the turkey is very tender.

  6. 6

With about 20 minutes left, squeeze the reserved roasted lemon half into a bowl and mix the juice with the zest from the other lemon half, the heavy cream, and the Dijon mustard.

  7. 7

Uncover the slow cooker and carefully remove the roasted lemon slices if you prefer a milder flavor. Add the cream, lemon, and mustard mixture and stir gently to combine.

  8. 8

Mix the cornstarch with the cold water until smooth. Stir it into the slow cooker, cover again, and cook on HIGH for 15 to 20 minutes more, until the sauce lightly thickens.

  9. 9

Taste and adjust salt if needed. Serve hot with fresh parsley sprinkled on top.

Chef tips

For an even silkier sauce, blend a small portion of the beans with a little cooking liquid before adding the cream. The fennel adds a gentle anise-like sweetness that pairs beautifully with roasted lemon.

Substitutions

You can swap the turkey for boneless chicken thighs. The heavy cream can be replaced with lactose-free cream if preferred. If you do not have fresh rosemary, use 1/2 teaspoon dried rosemary.
