Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F.

  2. 2

    2. In a large bowl, combine the chicken with 4 minced garlic cloves, 120 ml (1/2 cup) orange juice, 30 ml (2 tbsp) lime juice, 15 ml (1 tbsp) olive oil, 3 g (1 1/2 tsp) ground cumin, the dried oregano, 6 g (1 tsp) salt, 1 g (1/2 tsp) black pepper, and 100 g (about 3/4 cup) of the white onion. Let it marinate for 15 minutes while you prepare the rest.

  3. 3

    3. Place the chicken and its marinade in a baking dish in a single layer. Roast for 30 to 35 minutes at 220 °C / 425 °F, until cooked through and browned around the edges.

  4. 4

    4. While the chicken roasts, heat 15 ml (1 tbsp) olive oil in a saucepan over medium heat. Add the remaining 100 g (about 3/4 cup) white onion and 2 minced garlic cloves. Cook for 3 to 4 minutes until the onion turns translucent.

  5. 5

    5. Add the cooked black beans, bay leaf, 1 g (1/2 tsp) ground cumin, 120 ml (1/2 cup) chicken broth or water, 2 g (1/4 tsp) salt, and 1 g (1/4 tsp) black pepper to the saucepan. Cook over medium-low heat for 15 to 18 minutes, stirring occasionally. Lightly mash a small portion of the beans with a spoon so they become silky. Remove the bay leaf.

  6. 6

    6. For the passion fruit mojo, place the passion fruit pulp, 15 ml (1 tbsp) honey, 15 ml (1 tbsp) lime juice, and the remaining 15 ml (1 tbsp) chicken broth or water in a small skillet. Cook over medium heat for 2 to 3 minutes until lightly thickened and glossy.

  7. 7

    7. Heat a griddle or large skillet over medium heat. Add the butter and, once melted, place the ripe plantains in the pan. Cook for 2 to 3 minutes per side until deeply golden and caramelized.

  8. 8

    8. Remove the chicken from the oven and let it rest for 5 minutes. Spoon the passion fruit mojo over the top and sprinkle with fresh cilantro.

  9. 9

    9. Serve the roasted chicken with the silky black beans and griddled sweet plantain. Spoon the pan juices over the chicken for extra flavor.

Chef tips

If the passion fruit is very tart, add 1 extra teaspoon of honey. For a more roasted finish, broil the chicken for 2 minutes at the end, watching closely.

Substitutions

You can use skin-on chicken thighs for extra flavor, adding a few more minutes of cooking time. Cilantro can be replaced with fresh parsley. If you do not have passion fruit, use mango puree with a few extra drops of lime for a different, less tart profile.
