Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. In a bowl, mix the chicken with 4 g (3/4 tsp) salt, black pepper, half of the cumin, half of the oregano, half of the garlic, and the orange juice. Let it marinate for 15 minutes while you prepare the rest.

  2. 2

Place the ripe plantains on a baking tray, brush them with the melted butter, and season with a pinch of salt. Roast at 220 °C / 425 °F for 20 to 25 minutes, turning halfway through, until golden and tender.

  3. 3

Meanwhile, heat 2 tbsp vegetable oil in a wide pot over medium-high heat. Sear the marinated chicken for 3 to 4 minutes per side. Remove and set aside.

  4. 4

In the same pot, add the remaining onion and sweet pepper. Cook for 4 minutes until softened. Stir in the rest of the garlic, cumin, and oregano, and cook 30 seconds more.

  5. 5

Add the tamarind paste, tomato puree, brown sugar, green olives, bay leaf, and 240 ml (1 cup) of chicken broth. Mix well and bring to a gentle simmer.

  6. 6

Return the chicken to the pot along with any juices. Reduce the heat to medium-low, partially cover, and cook for 20 to 25 minutes, until the chicken is tender and fully cooked.

  7. 7

For the yellow rice, heat the remaining 1 tbsp oil in a medium saucepan over medium heat. Sauté the reserved half of the onion for 2 minutes. Add the rice, turmeric, and 4 g (3/4 tsp) salt, and stir for 1 minute.

  8. 8

Pour the remaining 240 ml (1 cup) chicken broth into the rice. Once boiling, reduce the heat to low, cover, and cook for 16 to 18 minutes until the liquid is absorbed. Turn off the heat and let it rest for 5 minutes; then fluff with a fork.

  9. 9

Remove the bay leaf from the chicken sauce. Add the lime juice and adjust salt if needed. If you want a thicker sauce, simmer uncovered for 2 to 3 minutes more.

  10. 10

Serve the yellow rice as a base, spoon the tamarind chicken and sauce on top, and add the roasted ripe plantains on the side. Finish with chopped fresh cilantro.

Chef tips

For deeper flavor, marinate the chicken for up to 1 hour in the refrigerator. Sear the chicken well before simmering to build better color and flavor in the sauce.

Substitutions

You can use bone-in chicken thighs, slightly increasing the cooking time. If you do not have sweet pepper, substitute mild red bell pepper. The butter for the plantains can be replaced with vegetable oil to avoid dairy.
