Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Place half of the lemon and 2 unpeeled garlic cloves on a small tray, drizzle with 1 teaspoon olive oil, and roast for 12 minutes, until the lemon is lightly caramelized and the garlic is soft.

  2. 2

    2. Meanwhile, season the chicken thighs with salt, black pepper, dried thyme, and sweet paprika.

  3. 3

    3. Arrange the yellow onion, chopped Swiss chard stems, 4 minced garlic cloves, bay leaf, and thin slices from the other half of the lemon in the base of the slow cooker.

  4. 4

    4. Place the seasoned chicken on top. Add the butter beans and pour in the chicken broth along with 1 tablespoon of olive oil.

  5. 5

    5. Cover and cook on low for 6 hours, until the chicken is very tender. If checking with a thermometer, the center of the chicken should reach at least 74 °C / 165 °F.

  6. 6

    6. Remove the bay leaf. Squeeze the roasted lemon into the cooker and mash the roasted garlic pulp into the sauce. Add the capers, Swiss chard leaves, and the remaining tablespoon of olive oil.

  7. 7

    7. Cover again and cook for 15 more minutes on high, just until the Swiss chard leaves soften.

  8. 8

    8. Adjust salt and pepper if needed. Finish with chopped fresh parsley and serve hot with plenty of sauce, beans, and vegetables in each portion.

Chef tips

For a thicker sauce, lightly mash some of the beans at the end of cooking. If you prefer a milder lemon flavor, remove the lemon slices before serving.

Substitutions

You can swap Swiss chard for spinach, though it should be added only during the last 10 minutes. Butter beans can be replaced with cannellini or other large cooked white beans. Parsley can be swapped for fresh dill for a more herbal profile.
