Instructions

  1. 1

    1. Lightly grease the slow cooker insert with the olive oil. Place the yellow onion, leek, garlic, and sweet potato on the bottom.

  2. 2

    2. Season the chicken thighs with the salt and black pepper. Arrange them over the vegetables in the slow cooker.

  3. 3

    3. In a bowl, whisk together the still apple cider, chicken broth, Dijon mustard, and fresh thyme. Pour this mixture over the chicken and vegetables.

  4. 4

    4. Cover and cook on low for 6 hours, until the chicken is very tender and reaches a minimum internal temperature of 165°F and 74°C.

  5. 5

    5. Open the slow cooker and transfer the chicken to a plate. If you want to keep it warm, loosely cover it with foil.

  6. 6

    6. In a small bowl, mix the cornstarch with the water until smooth. Stir it into the sauce in the slow cooker along with the apple cider vinegar.

  7. 7

    7. Return the chicken to the slow cooker. Cover and cook for 20 more minutes on high so the sauce thickens lightly.

  8. 8

    8. Taste and adjust with more salt or pepper if needed. Serve the chicken with the sweet potato and leek, spooning over the sauce and finishing with fresh parsley and, if desired, a little extra thyme.

Chef tips

For deeper flavor, you can brown the chicken for 3 to 4 minutes per side in a skillet over medium-high heat before adding it to the slow cooker. If the sauce gets too thick, add a little more broth; if it is too thin, cook uncovered on high for a few minutes.

Substitutions

You can substitute the chicken with turkey pieces with a similar slow-cooking time. Sweet potato can be replaced with firm pumpkin or squash. If you do not have leek, use extra onion. Dijon mustard can be replaced with mild whole grain mustard, though the texture will change.
