Instructions
- 1
1. Lightly grease the slow cooker. Add the yellow onion, garlic, fresh ginger, acorn squash, and shiitake mushrooms.
- 2
2. Season the chicken thighs with the salt and black pepper, then place them over the vegetables in the slow cooker.
- 3
3. In a bowl, whisk together the coconut milk, chicken broth, tomato paste, tamari sauce, sesame oil, lime zest, lime juice, and honey until smooth.
- 4
4. Pour the sauce over the chicken and vegetables. Cover and cook on low for 6 hours, until the chicken is very tender and the squash is cooked through. If you want to verify doneness, the center of the chicken should reach 165°F / 74°C.
- 5
5. Uncover, add the chopped fresh cilantro, and stir gently to combine without breaking up the squash too much.
- 6
6. Taste and adjust with more salt or black pepper if needed. Serve hot, topped with the toasted sesame seeds and extra fresh cilantro.
- 7
7. If you prefer a more golden finish, transfer a cooked portion to an oven-safe dish and broil or roast briefly at 425°F / 220°C for 5 to 7 minutes before serving.
Chef tips
For a thicker sauce, leave the lid off for the last 20 to 30 minutes of cooking. Cut the squash into large cubes so it keeps its shape. Shiitake mushrooms add depth, but avoid cutting them too small or they may overcook.
Substitutions
You can substitute acorn squash with kabocha or butternut squash. Cilantro can be replaced with parsley for a milder flavor. For a soy-free version, use coconut aminos instead of tamari. Honey can be replaced with maple syrup.
