Instructions

  1. 1

    1. Heat a large skillet over medium heat, about 350°F/175°C surface temperature. Add 1 tablespoon of olive oil and cook the onion for 10 to 12 minutes until golden and soft. Stir in the garlic and cook 1 minute more.

  2. 2

    2. Add the tomato paste, sweet paprika, cumin, and oregano to the skillet. Cook for 1 minute, stirring, to bloom the flavors. Transfer this mixture to the slow cooker insert.

  3. 3

    3. Season the chicken thighs with salt and black pepper. Place them over the onion mixture in the slow cooker. Add the chicken broth and bay leaves.

  4. 4

    4. Cover and cook on LOW for 4 hours, or until the chicken is very tender and reaches a safe internal temperature of 165°F/74°C.

  5. 5

    5. Uncover, add the green olives, capers, and white wine vinegar. Stir gently and cook 15 minutes more on HIGH to bring the flavors together.

  6. 6

    6. While the chicken finishes, heat another large skillet over medium-high heat, about 375°F/190°C surface temperature. Add the remaining tablespoon of olive oil and cook the cauliflower for 5 to 7 minutes, stirring, until tender but still fluffy.

  7. 7

    7. Turn off the heat under the cauliflower and mix in the fresh parsley, lemon zest, and lemon juice. Adjust salt if needed.

  8. 8

    8. Remove the bay leaves from the slow cooker. Serve the chicken with its onion, olive, and caper sauce over the parsley cauliflower rice.

Chef tips

For deeper flavor, lightly brown the chicken in the skillet before transferring it to the slow cooker. Do not add the olives and capers at the beginning so they keep a better texture and brighter taste.

Substitutions

You can use boneless turkey thighs instead of chicken, with a similar cooking time. If you do not have white wine vinegar, use the same amount of extra lemon juice. Parsley can be replaced with cilantro for a fresher profile.
