Instructions

  1. 1

    1. In a large bowl, toss the chicken with the salt, black pepper, dried thyme, and 1/2 teaspoon of the dried tarragon until evenly seasoned.

  2. 2

    2. Heat a large skillet over medium-high heat. Add the olive oil and brown the chicken for 2 to 3 minutes per side, just until lightly colored. If you want to keep it warm, set it aside covered or in a 200 °F / 95 °C oven. Transfer the chicken to the slow cooker.

  3. 3

    3. In the same skillet, add the onion, leek, and garlic. Cook for 3 minutes, stirring, until they begin to soften. Stir in the apple cider and Dijon mustard, scraping up the browned bits, and cook 1 minute more.

  4. 4

    4. Arrange the parsnips and white beans in the slow cooker around the chicken. Add the onion-cider mixture, pour in the chicken broth, and add the remaining dried tarragon along with the bay leaf.

  5. 5

    5. Cover and cook on LOW for 6 hours, or until the chicken is very tender and reaches a safe internal temperature of 165 °F / 74 °C. If your cooker has a HIGH setting, you can also cook it for 3 1/2 to 4 hours on HIGH.

  6. 6

    6. Remove the bay leaf. Mix the cornstarch with the cold water until smooth. Stir it into the slow cooker and cook for 10 to 15 minutes more on HIGH until the sauce lightly thickens.

  7. 7

    7. Taste and adjust salt and pepper if needed. Sprinkle with fresh parsley and serve hot, making sure each plate gets chicken, parsnips, leek, beans, and sauce.

Chef tips

For deeper flavor, brown the chicken well before adding it to the cooker. Wash the leek thoroughly between the layers to remove any grit. If the sauce becomes too thick, loosen it with a splash of warm broth.

Substitutions

You can swap the parsnips for turnip or carrot. Tarragon can be replaced with dill or a little extra thyme. The white beans can be cannellini or butter beans. If you do not have apple cider, use unsweetened apple juice with a small splash of mild vinegar.
