Instructions

  1. 1

Preheat the oven to 220°C / 425°F. In a bowl, toss the sweet potato with 1 tablespoon olive oil, half of the chopped garlic, 1/2 teaspoon salt, and a little black pepper. Spread on a tray and roast for 30 to 35 minutes at 220°C / 425°F, turning halfway through, until golden and tender.

  2. 2

Season the turkey thighs with the cumin, oregano, sweet paprika, 1 teaspoon salt, black pepper, and lemon juice. Let rest for 10 minutes while you prepare the sofrito.

  3. 3

Heat 1 tablespoon olive oil in a wide pot or Dutch oven over medium heat. Brown the turkey for 3 to 4 minutes per side, without fully cooking it. Transfer to a plate.

  4. 4

In the same pot, add the onion, red bell pepper, green bell pepper, and the remaining garlic. Cook for 6 to 8 minutes, stirring, until the vegetables are soft. Add the tomato paste and cook 1 minute more.

  5. 5

Pour in the dry white wine and scrape the bottom of the pot to release the browned bits. Cook for 2 minutes. Add the crushed tomato, 360 ml / 1 1/2 cups of the broth, 1 bay leaf, and the green olives. Mix well.

  6. 6

Return the turkey to the pot. When the liquid reaches a gentle simmer, lower the heat, partially cover, and cook for 40 minutes, until the turkey is very tender. Remove the turkey, shred it with two forks, and return it to the sauce. Cook 5 minutes more so it absorbs the sofrito. Remove the bay leaf.

  7. 7

While the turkey cooks, prepare the rice. In a medium saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the rinsed rice and stir for 1 minute. Add 120 ml / 1/2 cup of the remaining broth, 240 ml / 1 cup water, the remaining bay leaf, and 1/4 teaspoon salt.

  8. 8

When the rice begins to boil, reduce the heat to low, cover, and cook for 15 minutes. Turn off the heat and let it rest, covered, for 10 minutes. Remove the bay leaf and fluff the rice with a fork.

  9. 9

Serve the hot turkey ropa vieja with the bay leaf white rice and garlic-roasted sweet potato. Finish with fresh parsley on top.

Chef tips

For deeper flavor, brown the turkey well without burning the bottom of the pot. If the sauce reduces too much, add a splash of hot broth before shredding the meat.

Substitutions

You can use boneless chicken thighs instead of turkey, reducing the cooking time to 30-35 minutes. If you do not have dry wine, use the same amount of broth plus 1 extra teaspoon of lemon juice. Sweet potato can be replaced with firm squash.
