Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking dish with 1 tablespoon (15 ml) olive oil.

  2. 2

    2. Heat a skillet over medium heat with 1 tablespoon (15 ml) olive oil. Sauté the onion, half of the garlic, and the red bell pepper for 4 to 5 minutes, until tender.

  3. 3

    3. Add the callaloo or spinach, scallions, half of the thyme, cumin, 1/4 teaspoon allspice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 2 to 3 minutes until the greens soften and the filling is fragrant. Remove from the heat and let cool for 5 minutes.

  4. 4

    4. Season the fish fillets with lime juice, the remaining garlic, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and the remaining allspice. Let them rest for 10 minutes.

  5. 5

    5. Lay the fillets on a board. Divide the callaloo filling over each fillet and roll them up carefully. Place the rolls seam-side down in the prepared dish. Drizzle with the remaining tablespoon of olive oil.

  6. 6

    6. Bake the fish rolls at 200 °C / 400 °F for 14 to 16 minutes, or until the fish is opaque and flakes easily.

  7. 7

    7. While the fish bakes, place the pumpkin in a saucepan with the coconut milk, vegetable broth or water, ginger, remaining thyme, butter, and 1/2 teaspoon salt. Cook over medium heat for 15 to 18 minutes, until the pumpkin is very tender.

  8. 8

    8. Blend the pumpkin mixture until smooth and creamy. Adjust with a little more broth if you want a lighter texture. Taste and correct with salt and black pepper as needed.

  9. 9

    9. Slice the green plantain very thinly. In a small skillet, cook the slices over medium heat with a few drops of the residual oil from the baking dish or with a light film of oil for 2 to 3 minutes per side, until golden and crisp. Add a pinch of salt.

  10. 10

    10. Spoon a base of coconut pumpkin cream onto each plate. Set one fish roulade on top and finish with the green plantain crisp. If desired, add a few extra drops of lime juice before serving.

Chef tips

For easier rolling, use fillets of even thickness. If they are very wide, cut them lengthwise. The pumpkin cream should be smooth but not runny so it can support the roulade well.

Substitutions

You can use spinach if callaloo is not available. Pumpkin can be replaced with orange sweet potato for a sweeter cream. If preferred, swap the green plantain for thin cassava chips.
