Instructions

  1. 1

    1. Heat a large skillet over medium-high heat for 1 minute. Add the olive oil and red onion; cook for 2 minutes until it starts to soften.

  2. 2

    2. Stir in the garlic, sweet paprika, salt, and black pepper. Cook for 30 seconds until fragrant, being careful not to burn the garlic.

  3. 3

    3. Add the ground turkey and cook for 5 to 6 minutes, breaking it up with a spatula, until well browned and it reaches a safe internal temperature of 165°F / 74°C.

  4. 4

    4. Add the diced red apple and fresh thyme. Cook for 2 minutes more, stirring, until the apple is warmed through but still keeps some texture.

  5. 5

    5. Mix the Dijon mustard with the chicken broth or water and pour it into the skillet. Add the cooked rice and stir well for 2 minutes so it absorbs the flavor and heats through completely.

  6. 6

    6. Add the fresh spinach and cook for 1 minute, stirring, until wilted.

  7. 7

    7. Reduce the heat to medium-low, scatter the shredded cheddar cheese over the top, and cover the skillet for 1 to 2 minutes until the cheese melts. If you prefer a broiled finish, place an oven-safe skillet under a preheated broiler at 450°F / 230°C for 1 minute, watching closely.

  8. 8

    8. Taste and adjust with more salt and pepper if needed. Serve hot as soon as the cheese is melted.

Chef tips

Use cold cooked rice for a looser, better skillet texture. A firm apple such as Fuji or Gala works especially well because it holds its shape in the pan.

Substitutions

You can swap the turkey for ground chicken. The cheddar can be replaced with gouda or mild mozzarella. If you do not have fresh thyme, use 1/2 teaspoon dried thyme.
