Instructions

  1. 1

    1. In a medium bowl, toss the red cabbage and red onion with 1 tablespoon of lime juice, a pinch of salt, and half of the cilantro. Mix well and let it sit while you prepare the rest.

  2. 2

    2. In another bowl, mash the avocado with the Greek yogurt, lime zest, 1 tablespoon of lime juice, honey, half of the garlic powder, and 1 tablespoon of olive oil until thick and smooth. Season with a pinch of salt and black pepper.

  3. 3

    3. Pat the firm white fish pieces dry with paper towels. Season them with the smoked paprika, ground cumin, remaining garlic powder, half of the remaining salt, black pepper, and, if using, the red pepper flakes.

  4. 4

    4. Heat a large skillet over medium-high heat for 1 to 2 minutes. Add 1 tablespoon olive oil and the corn kernels. Cook for 3 to 4 minutes, stirring occasionally, until the corn is toasted in spots. Transfer to a plate.

  5. 5

    5. In the same skillet, add a little more oil if needed and cook the fish for 2 to 3 minutes per side, until golden and it flakes easily. The internal temperature should reach 63°C / 145°F.

  6. 6

    6. Warm the corn tortillas directly in a dry skillet or over a flame for 20 to 30 seconds per side until flexible and lightly toasted. If using the oven, warm them together wrapped in foil at 180°C / 350°F for 5 minutes.

  7. 7

    7. Gently break the cooked fish into large chunks. Spread the avocado lime cream over the tortillas, then top with the fish, toasted corn, and the red cabbage-onion mixture. Finish with the remaining cilantro and a few extra drops of lime juice.

  8. 8

    8. Serve immediately while the tortillas are warm and the fish is freshly cooked.

Chef tips

For the best texture, do not move the fish too much in the skillet; this helps it brown nicely. If the cream is too thick, loosen it with 1 or 2 teaspoons of water or extra lime juice.

Substitutions

You can swap the white fish for cubed salmon, adjusting the cooking time as needed. Greek yogurt can be replaced with sour cream, and cilantro can be swapped for parsley for a milder flavor.
