Instructions

1. In a small bowl, mix the honey, hot sauce, lime zest, and 15 ml (1 tbsp) of the lime juice. Set the spicy honey aside.
- 2
2. Toss the red onion with a pinch of salt and another 15 ml (1 tbsp) lime juice if available from the lime; if not, use just a few drops of the remaining juice. Let it sit while you prepare the rest so it softens slightly.
- 3
3. Heat a large skillet or grill pan over medium-high heat, about 400°F / 205°C at the cooking surface. Add half of the olive oil.
- 4
4. Sear the halloumi for 2 to 3 minutes per side until deeply golden at the edges. Transfer to a plate.
- 5
5. In the same pan, add the remaining olive oil and cook the peach wedges for 1 to 2 minutes per side until lightly charred and just softened. Season with the salt and black pepper.
- 6
6. Warm the corn tortillas directly in the skillet or on a griddle over medium heat, around 350°F / 175°C, for 20 to 30 seconds per side until flexible and warm.
- 7
7. Assemble the tacos by dividing the halloumi, charred peaches, and red onion among the warm tortillas.
- 8
8. Finish with the fresh cilantro, fresh mint, sesame seeds, and a drizzle of spicy honey over each taco. Serve immediately with any remaining lime juice on the side.
Chef tips
If the halloumi releases a lot of moisture, pat it dry before searing for better browning. For extra contrast, you can let the peaches cool for 1 minute before assembling the tacos.
Substitutions
You can substitute halloumi with firm panela or frying cheese. Peach can be replaced with nectarine. Cilantro can be swapped for parsley, and mint for fresh basil.
