Instructions

  1. 1

Bring a medium pot of water to a boil. Cook the wheat noodles according to the package until al dente. Drain and reserve 60 ml (1/4 cup) of the cooking water.

  2. 2

Meanwhile, in a small bowl whisk together the white miso, orange juice, soy sauce, sesame oil, honey, orange zest, and water until smooth.

  3. 3

Heat a wok or large skillet over medium-high heat for 1 minute, about 375°F/190°C at the surface. Add the vegetable oil and swirl to coat.

  4. 4

Add the chicken in a single layer and cook for 3 to 4 minutes, stirring once or twice, until browned and cooked through; the center should reach 165°F/74°C.

  5. 5

Add the white parts of the scallions, garlic, and ginger. Stir-fry for 30 to 45 seconds until fragrant.

  6. 6

Add the frozen peas and cook for 2 minutes, stirring, until tender and bright green.

  7. 7

Pour the miso-orange sauce into the skillet and cook for 1 minute, stirring, until it gently bubbles and turns glossy.

  8. 8

Add the cooked noodles and toss well for 1 to 2 minutes. If needed, add the reserved cooking water a little at a time to loosen the sauce.

  9. 9

Turn off the heat and finish with the green parts of the scallions and the toasted sesame seeds. Serve immediately.

Chef tips

For the best texture, do not overcook the noodles, and brown the chicken in batches if your skillet is small. Toasting the sesame seeds in a dry pan for 1 minute boosts flavor significantly.

Substitutions

You can swap the chicken for turkey strips. Honey can be replaced with maple syrup if you prefer a different sweetness. If you do not have fresh orange, use mandarin. For a gluten-free version, use gluten-free noodles and gluten-free soy sauce.
