Instructions

  1. 1

    1. Place the beef in the slow cooker insert. Add the celery, carrot, onion, garlic, and ginger around and over the meat.

  2. 2

    2. In a bowl, whisk together the white miso, orange juice, orange zest, soy sauce, toasted sesame oil, beef broth, rice vinegar, honey, sesame seeds, and black pepper until smooth.

  3. 3

    3. Pour the sauce over the beef and vegetables. Cover and cook on LOW for 6 hours, or until the meat is very tender. If your slow cooker has a temperature setting, this usually corresponds to about 190-200 °F / 88-93 °C inside the cooker.

  4. 4

    4. Once cooking is done, uncover and stir gently. In a small glass or bowl, mix the cornstarch with the water until smooth. Stir this slurry into the cooker thoroughly.

  5. 5

    5. Cover again and cook for 15-20 minutes more on HIGH, until the sauce lightly thickens. In many machines, the HIGH setting is roughly around 280-300 °F / 138-149 °C.

  6. 6

    6. Taste and adjust with a little more black pepper if desired. Serve the beef with its sauce, finishing with chopped chives and, if you like, an extra pinch of sesame seeds.

Chef tips

For deeper flavor, you can brown the beef for 5-6 minutes before transferring it to the slow cooker. Do not add salt at the beginning: the miso and soy sauce already bring seasoning.

Substitutions

You can replace the honey with maple syrup. Chives can be swapped for the green part of scallions. If you do not have rice vinegar, use the same amount of mild apple cider vinegar.
