Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Grease a 9 x 5 in loaf pan with 10 g butter and line it with parchment, leaving overhang on the sides.

  2. 2

    2. Place the sweet potato on a baking tray and toss with 15 ml olive oil, 3 g salt, 1 g black pepper, and the nutmeg. Roast for 20 minutes at 200 °C / 400 °F, turning halfway through, until tender but not falling apart. Set aside.

  3. 3

    3. Meanwhile, heat the remaining butter and 15 ml olive oil in a large skillet over medium heat. Add the yellow onion with a pinch of salt and cook for 12 to 15 minutes, stirring, until golden and caramelized.

  4. 4

    4. Add the cremini mushrooms and cook for 8 minutes until they release and evaporate their moisture. Add the garlic, fresh rosemary, and half of the fresh thyme; cook 1 minute more. Season with the remaining salt and black pepper. Remove from the heat and let cool slightly.

  5. 5

    5. In a large bowl, mix the beaten eggs, heavy cream, breadcrumbs, and grated Parmesan cheese. Add the mushroom-onion mixture and combine well.

  6. 6

    6. Assemble the terrine in layers: place a layer of sweet potato on the bottom of the pan, cover with some of the mushroom mixture, add pieces of goat cheese, and repeat the layers until finished, pressing gently. End with a sweet potato layer on top.

  7. 7

    7. Cover the pan with foil and bake for 30 minutes at 180 °C / 350 °F. Remove the foil and bake 15 minutes more at 180 °C / 350 °F, until set and lightly golden.

  8. 8

    8. While it bakes, make the glaze: in a small saucepan combine the pomegranate molasses, pomegranate juice, honey, balsamic vinegar, and the remaining fresh thyme. Cook over medium-low heat for 6 to 8 minutes until slightly thickened.

  9. 9

    9. Let the terrine rest for 10 minutes out of the oven. Unmold carefully, brush with some of the pomegranate-thyme glaze, and finish with the pomegranate arils and chopped toasted walnuts.

  10. 10

    10. Serve hot or warm, with the remaining glaze on the side so each portion can have a little extra.

Chef tips

For cleaner slices, let the terrine rest for 15 minutes before cutting. You can toast the walnuts for 5 minutes in a 180 °C / 350 °F oven to deepen their flavor.

Substitutions

You can replace the goat cheese with firm feta or thick cream cheese. Cremini mushrooms can be swapped for portobello or white mushrooms. If you do not have pomegranate molasses, reduce pomegranate juice with a little extra honey and balsamic for a similar finish.
