Instructions

  1. 1

    1. Bring a large pot of water to a boil over high heat. Once boiling, cook the fresh tortellini according to the package directions, usually 3 to 4 minutes, until tender. Reserve 120 ml (1/2 cup) of the pasta water before draining.

  2. 2

    2. While the tortellini cook, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Serrano ham strips and cook for 2 to 3 minutes, stirring, until crispy. Transfer to a plate.

  3. 3

    3. In the same skillet, add the peas and 2 tablespoons of water. Cook for 2 minutes over medium heat, just until tender and bright green.

  4. 4

    4. Transfer the peas to a blender or food processor. Add the basil, chopped garlic, grated Parmesan, 2 tablespoons olive oil, the lemon zest, 2 tablespoons lemon juice, 60 ml (1/4 cup) of the reserved pasta water, and black pepper. Blend until thick and creamy. Add a little more pasta water if needed to loosen the sauce. Taste and adjust salt if needed.

  5. 5

    5. Return the skillet to low heat and add the drained tortellini along with the pea pesto. Toss gently for 1 to 2 minutes until the pasta is evenly coated and glossy. Add another splash of pasta water if you want a silkier texture.

  6. 6

    6. Divide the tortellini among plates and finish with the crispy ham on top. Add extra Parmesan and a little more lemon zest if desired. Serve immediately.

  7. 7

    7. If you prefer to warm the plates before serving, you can heat them briefly in an oven at 80 °C / 175 °F for 2 to 3 minutes.

Chef tips

Do not overblend the pesto to keep its bright green color. For more contrast, reserve a tablespoon of whole peas for plating.

Substitutions

You can use browned deli ham or thin pancetta instead of Serrano ham. Mint can replace part of the basil for a fresher profile. If you do not have Parmesan, use Pecorino, keeping in mind it will be sharper and saltier.
