Instructions

  1. 1

    1. Place the shredded zucchini in a clean towel or between paper towels and squeeze well to remove as much liquid as possible. Transfer it to a large bowl.

  2. 2

    2. Add the corn kernels, red onion, shredded cheddar cheese, beaten eggs, all-purpose flour, baking powder, smoked paprika, 3 g salt, and black pepper to the bowl. Mix until you have a thick, even batter.

  3. 3

    3. In a small bowl, make the sauce by mixing the plain Greek yogurt with the lime zest, 15 ml (1 tbsp) lime juice, 2 g salt, and half of the chopped chives. Set aside.

  4. 4

    4. Heat a large nonstick skillet over medium heat. If you want to keep the fritters warm, you can preheat the oven to 200°F / 95°C.

  5. 5

    5. Add 15 ml (1 tbsp) olive oil to the skillet. Shape 4 fritters using about 2 heaping tablespoons of batter each and cook for 3 to 4 minutes per side, until golden and set.

  6. 6

    6. Repeat with the remaining olive oil and batter to make 4 more fritters, adjusting the heat if they brown too quickly. If needed, keep them warm in the oven at 200°F / 95°C while you finish.

  7. 7

    7. Serve the fritters hot with the lime yogurt sauce spooned over or on the side, and finish with the remaining chopped chives.

  8. 8

    8. If desired, let the fritters rest for 1 minute before serving so they set a little more and hold their shape.

Chef tips

Squeezing the zucchini very well is the key to fritters that turn golden instead of soggy. If the batter seems too wet, add 1 extra tablespoon of flour.

Substitutions

You can swap the cheddar for shredded mozzarella or a semi-hard cheese. Chives can be replaced with chopped parsley. For a spicier version, add a pinch of chili flakes to the batter.
