Instructions

  1. 1

    1. In a bowl, whisk together the soy sauce, honey, lime juice, sesame oil, water, and cornstarch until smooth. Set the sauce aside.

  2. 2

    2. Pat the beef strips dry and season them with salt and black pepper. Slice the peaches into thin wedges, mince the garlic, grate the ginger, and separate the white and green parts of the scallions.

  3. 3

    3. Heat a large skillet or wok over medium-high heat for 1 minute. Add the vegetable oil and, once hot, add the beef. Stir-fry for 2 to 3 minutes until quickly browned without overcooking.

  4. 4

    4. Add the white scallion parts, garlic, ginger, and red pepper flakes. Cook for 30 seconds, stirring constantly so the garlic does not burn.

  5. 5

    5. Add the peach wedges and cook for 1 to 2 minutes so they lightly caramelize around the edges while keeping their shape.

  6. 6

    6. Add the udon noodles and pour in the reserved sauce. Using tongs or a spatula, toss for 2 to 3 minutes until the noodles loosen, the sauce thickens, and the beef becomes nicely glazed.

  7. 7

    7. Turn off the heat and add the green scallion parts. Taste and adjust with a little more salt, black pepper, or extra lime juice if desired.

  8. 8

    8. Serve immediately and finish with sesame seeds on top. If you need to keep the dish warm, do so in the oven at 200°F/95°C for no more than 10 minutes to prevent the noodles from drying out.

Chef tips

For the best texture, do not overcrowd the pan; if your skillet is small, cook the beef in two batches. The peach should be firm so it does not fall apart when tossed with the noodles.

Substitutions

You can swap the beef for sliced chicken breast. Peach can be replaced with nectarine. For a gluten-free version, use gluten-free tamari and certified gluten-free noodles.
