Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Line a baking sheet or tray with parchment paper or lightly grease it with some of the vegetable oil.

  2. 2

In a large bowl, mix the ground beef, breadcrumbs, egg, half of the chopped yellow onion, 2 garlic cloves, parsley, 1 teaspoon salt, 1/4 teaspoon black pepper, and smoked paprika. Mix just until combined.

  3. 3

Shape into 16 evenly sized meatballs and place them on the prepared tray. Brush or drizzle them with 1 tablespoon of vegetable oil.

  4. 4

Bake the meatballs for 14 to 16 minutes at 220 °C / 425 °F, until cooked through and browned around the edges.

  5. 5

While they bake, place the sweet potatoes in a medium pot with enough water and a pinch of salt. Bring to a boil and cook for 15 to 18 minutes until very tender. Drain well.

  6. 6

For the sauce, heat the remaining 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the remaining onion and cook for 4 to 5 minutes until softened. Add the remaining garlic clove and cook 30 seconds more.

  7. 7

Stir in the cherry preserves, bourbon, apple cider vinegar, Worcestershire sauce, and Dijon mustard. Cook for 4 to 6 minutes, stirring, until the sauce is glossy and slightly thickened.

  8. 8

Transfer the baked meatballs to the skillet with the sauce and coat them well. Cook for 2 to 3 minutes more over low heat so they absorb the glaze.

  9. 9

Mash the hot sweet potatoes with 2 tablespoons of the butter, the milk, 1/2 teaspoon salt, and the remaining black pepper until rustic but smooth.

  10. 10

In another skillet, melt the remaining butter over medium heat. Add the corn and red bell pepper and sauté for 4 to 5 minutes. Stir in the scallions, lemon juice, and remaining salt; cook 1 minute more.

  11. 11

Serve a portion of rustic sweet potato mash, place the glazed meatballs with their cherry bourbon sauce on top or alongside, and finish with the warm corn-scallion salad.

Chef tips

For a deeper sauce, let it reduce 1 to 2 extra minutes before adding the meatballs. If you want more browning, switch on the broiler for 1 to 2 minutes, watching closely.

Substitutions

You can swap the beef for ground turkey, though the flavor will be lighter. Cherry preserves can be replaced with dark berry or blackberry jam. Sweet potatoes can be swapped for Yukon gold potatoes, and the milk for light cream for a richer mash.
