Instructions

  1. 1

    1. Heat the vegetable stock in a small saucepan and keep it over very low heat so it stays hot throughout cooking, without boiling aggressively.

  2. 2

    2. In a dry skillet or in the oven, toast the walnuts until fragrant. If using the oven, bake them at 160 °C / 325 °F for 6 to 8 minutes. Set aside.

  3. 3

    3. In a wide pot, heat 1 tablespoon of olive oil. Add the red apple and sauté for 2 to 3 minutes until lightly golden but still holding its shape. Remove and set aside.

  4. 4

    4. In the same pot, add the remaining tablespoon of olive oil. Add the shallot and cook for 3 minutes over medium heat until softened. Add the garlic and cook 30 seconds more.

  5. 5

    5. Add the red cabbage, fresh thyme, ground cinnamon, black pepper, and salt. Cook for 5 minutes, stirring, until the cabbage softens slightly and becomes glossy.

  6. 6

    6. Add the short-grain rice and toast it for 1 minute, stirring well so it is coated with the oil and cabbage juices.

  7. 7

    7. Pour in the white wine and cook, stirring, until the alcohol evaporates and the liquid is almost fully reduced.

  8. 8

    8. Start adding the hot vegetable stock, one ladle at a time, stirring frequently. Wait until the rice has absorbed most of the liquid before adding more. Continue this way for 16 to 18 minutes.

  9. 9

    9. Halfway through cooking, return the sautéed apple to the pot so it blends in without completely breaking down.

  10. 10

    10. When the rice is creamy and al dente, remove from the heat. Add the butter, goat cheese, and balsamic vinegar. Stir gently until creamy.

  11. 11

    11. Divide the rice into shallow bowls and finish with the toasted walnuts on top. Adjust salt and serve immediately.

Chef tips

For an even creamier texture, let the rice rest for 1 minute off the heat before serving and add a small splash of extra hot stock if it thickens too much.

Substitutions

You can substitute the shallot with sweet onion, the goat cheese with creamy feta, and the walnuts with pecans or almonds. If you prefer not to use wine, replace it with the same amount of stock and add 1 extra teaspoon of balsamic vinegar at the end.
