Instructions

  1. 1

    1. Heat the vegetable stock in a saucepan and keep it over very low heat so it stays hot throughout cooking, without boiling hard.

  2. 2

    2. In a wide skillet or shallow pot, heat 1 tablespoon olive oil (15 ml) over medium heat. Add the onion with a pinch of salt and cook for 6-8 minutes, until translucent and soft.

  3. 3

    3. Add the minced garlic and cook for 30 seconds. Add half of the piquillo peppers and the sweet paprika, stirring for 1 minute so they release their aroma without burning.

  4. 4

    4. Add the rice and toast it for 1-2 minutes, stirring to coat the grains. Pour in the white wine and cook 2 more minutes until the alcohol evaporates and the liquid is almost fully reduced.

  5. 5

    5. Begin adding the hot stock gradually, about 240 ml (1 cup) at a time, stirring often. Wait until the rice absorbs most of the liquid before adding more. Maintain a gentle simmer for 16-18 minutes.

  6. 6

    6. While the rice cooks, make the light cream: place the goat cheese, cream, basil, lemon zest, 1 tablespoon olive oil (15 ml), and 2 tablespoons hot stock in a blender cup. Blend until smooth. Set aside.

  7. 7

    7. When the rice has 5 minutes left to cook, add the white beans and the remaining piquillo peppers. Stir gently so the beans do not break up too much.

  8. 8

    8. Taste the rice for doneness. It should be tender but slightly firm at the center, with a creamy consistency. Adjust the salt and add the black pepper.

  9. 9

    9. Remove from the heat and enrich with the butter. Add the light goat cheese basil cream, reserving a small amount for finishing. Stir for 1 minute until the texture is silky.

  10. 10

    10. Let it rest for 2 minutes. Serve the creamy rice in shallow bowls and finish with thin ribbons of the reserved cream and a few fresh basil leaves. If desired, warm the plates in an oven preheated to 200°F (95°C) for 5 minutes before serving.

  11. 11

    11. Serve immediately to enjoy the rice at its best creamy texture.

Chef tips

For a creamier texture, stir frequently but do not mash the grains. If it becomes too thick at the end, add a little more hot stock before serving. Use good-quality piquillo peppers for a fuller flavor.

Substitutions

You can replace the white beans with cannellini beans or cooked fresh white beans. Goat cheese can be swapped for cream cheese for a milder flavor, though the dish will lose some character. Basil can be replaced with flat-leaf parsley.
