Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Place the radicchio on a sheet pan, brush it with 1 tablespoon olive oil, season with a pinch of salt and black pepper, and roast for 12 to 15 minutes until the edges are browned and lightly crisp. Let it cool slightly, then cut into strips.

  2. 2

Meanwhile, bring the vegetable broth to a gentle simmer in a saucepan and keep it hot throughout cooking.

  3. 3

In a wide skillet or shallow pot, toast the walnuts over medium heat for 2 to 3 minutes, stirring, until fragrant. Remove and set aside.

  4. 4

In the same pan, add the remaining 1 tablespoon olive oil and 15 g butter. Add the onion with a pinch of salt and cook over medium heat for 6 to 8 minutes until soft and glossy. Add the garlic and fresh thyme and cook 30 seconds more.

  5. 5

Add the arborio rice and pearled barley. Stir for 1 to 2 minutes to coat and lightly toast the grains. Pour in the dry white wine and let it reduce almost completely.

  6. 6

Begin adding the hot vegetable broth, about 1 cup at a time, stirring often. Wait until the liquid is almost absorbed before adding more. Continue for 22 to 26 minutes, until the rice is creamy and the barley is tender with a slight bite.

  7. 7

Fold in the roasted radicchio and stir gently for 1 minute to distribute the flavor without breaking it down completely.

  8. 8

Turn off the heat and add the provolone, the remaining 15 g butter, the lemon zest, and 1 tablespoon lemon juice. Stir vigorously until the texture becomes creamy and cohesive. Adjust with salt and black pepper to taste.

  9. 9

Serve immediately and finish each plate with the toasted walnuts on top and a few extra thyme leaves if desired.

Chef tips

For an even creamier result, stir more frequently during the last 10 minutes and add a small extra splash of hot broth just before serving. Do not overcook the radicchio after adding it so it keeps its character.

Substitutions

You can replace provolone with fontina or mild scamorza. If you prefer not to use wine, use the same amount of broth instead. Walnuts can be replaced with toasted hazelnuts, keeping the tree nut allergen in mind.
