Instructions
- 1
1. Preheat the oven to 200 °C / 400 °F. Pat the cod fillets dry with paper towels and season them with 1/2 teaspoon salt, black pepper, smoked paprika, and 1/2 teaspoon ground cumin.
- 2
2. In a small bowl, combine the passion fruit pulp, lime juice, garlic, honey, 2 tablespoons olive oil, cilantro, 1/4 teaspoon salt, the remaining ground cumin, and half of the red onion. Set this mojo aside.
- 3
3. Place the green plantain pieces in a pot with enough water to cover and 1/4 teaspoon salt. Bring to a boil and cook for 12 to 15 minutes until tender but not falling apart. Drain well.
- 4
4. Mash the cooked plantain in a large bowl. Add the beaten egg, pre-cooked cornmeal, the remaining red onion, and a pinch of salt. Mix until a firm dough forms. Divide into 8 portions and shape into cakes about 1.5 cm / 1/2 inch thick.
- 5
5. Heat a large oven-safe skillet over medium-high heat with 1 tablespoon olive oil. Sear the cod fillets for 2 minutes per side. Spoon half of the passion fruit mojo over the fish and transfer the skillet to the oven. Bake for 6 to 8 minutes at 200 °C / 400 °F, until the fish is cooked through and flakes easily.
- 6
6. While the fish bakes, heat another skillet over medium heat with the vegetable oil. Cook the plantain cakes for 3 to 4 minutes per side until deeply golden and crisp. Transfer them to a paper towel-lined plate.
- 7
7. In a medium bowl, combine the red cabbage, cucumber, apple cider vinegar, the fresh red chili if using, 1 tablespoon of the reserved mojo, and a pinch of salt. Toss well and let stand for 5 minutes so it lightly marinates.
- 8
8. Serve each portion with one cod fillet, two green plantain cakes, and a helping of red cabbage salad. Finish with the remaining passion fruit mojo over the fish and cakes.
- 9
9. If you want to reheat, do so in the oven at 180 °C / 350 °F for 8 to 10 minutes to preserve the texture of both the cakes and the fish.
Chef tips
For the best texture, drain the cooked plantain very well before mashing. If your passion fruit pulp is very tart, add a few extra drops of honey. The fish cooks best when it goes into the oven right after searing.
Substitutions
You can substitute the cod with grouper, tilapia, or sea bass. Honey can be replaced with grated panela or brown sugar. If you do not have pre-cooked cornmeal, use a small amount of rice flour, though the texture will change slightly.
