Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Cut the eggplants lengthwise, score the flesh lightly without piercing the skin, brush with 1 tablespoon olive oil, season with a pinch of salt and pepper, and place them cut side up on a baking tray. Roast for 30 minutes at 220°C / 425°F until tender.

  2. 2

    2. While the eggplants roast, heat 1 tablespoon olive oil in a large skillet over medium heat. Brown the pork shoulder for 8 to 10 minutes, stirring, until well seared. Remove and set aside.

  3. 3

    3. In the same skillet add the onion and cook for 5 minutes. Stir in the garlic, sweet paprika, mild crushed chili, and dried oregano. Cook 1 minute more, stirring until fragrant.

  4. 4

    4. Return the pork shoulder to the skillet, add the chopped tomatoes, Malbec wine, and hot beef stock or water. Season with the remaining salt and pepper. Cook over medium-low heat for 35 minutes, partially covered, until the meat is tender and the liquid has reduced. Lightly shred the pork in the skillet with a spoon or fork.

  5. 5

    5. Remove the eggplants from the oven and lower the temperature to 200°C / 400°F. Using a spoon, scoop out part of the flesh, leaving a border so they keep their shape. Chop the scooped flesh and add it to the skillet with the pork. Cook for 5 minutes to blend the flavors.

  6. 6

    6. In a small pan, melt the butter with the remaining tablespoon of olive oil over medium-low heat. Add the breadcrumbs and half of the chopped parsley. Cook for 2 to 3 minutes until golden and crunchy. Set aside.

  7. 7

    7. Fill the eggplant halves with the Malbec pork mixture. Top with the grated provoleta and then the herbed crumbs.

  8. 8

    8. Return to the oven and bake for 15 minutes at 200°C / 400°F, or until the provoleta melts and the top is golden. For extra color, broil for 2 additional minutes, watching closely.

  9. 9

    9. Remove from the oven, finish with the remaining chopped fresh parsley, and serve hot.

Chef tips

For a richer texture, let the filling rest for 10 minutes before stuffing the eggplants. You can also prepare the Malbec pork filling a few hours ahead and bake with the topping right before serving.

Substitutions

You can replace the pork shoulder with cooked shredded roast beef, or swap provoleta for grated pategrás cheese. Malbec can be replaced with another dry red wine. For a gluten-free version, use gluten-free breadcrumbs.
