Instructions
- 1
1. Preheat the oven to 160 °C / 325 °F. Pat the short ribs dry, season with salt and black pepper, and lightly dust with the all-purpose flour.
- 2
2. Heat 2 tablespoons of the olive oil in a large oven-safe pot. Brown the short ribs in batches for 3 to 4 minutes per side until well colored. Remove and set aside.
- 3
3. In the same pot, add the onion, carrot, celery, and garlic. Cook over medium heat for 6 minutes until softened. Stir in the tomato paste and cook 1 minute more.
- 4
4. Pour in the Malbec wine and scrape up the browned bits. Let it boil for 3 minutes. Add the crushed tomato, beef broth, bay leaf, and fresh thyme.
- 5
5. Return the short ribs to the pot. The liquid should come up nearly to the top of the meat. Cover and bake at 160 °C / 325 °F for 2 hours, or until the meat is very tender.
- 6
6. Meanwhile, grease a baking dish with some of the remaining olive oil. Arrange the potatoes and leek in loose layers.
- 7
7. In a small saucepan, warm the butter with the heavy cream, milk, nutmeg, and a pinch of salt and pepper without boiling. Pour this mixture over the potatoes and leek.
- 8
8. Cover the dish with foil and bake the potato bake at 190 °C / 375 °F for 40 minutes. Remove the foil, add the grated provoleta, and bake 20 minutes more, until the potatoes are tender and the top is golden.
- 9
9. When the short ribs are ready, remove the pot from the oven. Lift out the meat carefully and discard the bay leaf. Simmer the sauce over medium heat for 8 to 10 minutes until slightly thickened. Adjust with salt and pepper.
- 10
10. Serve a portion of the rustic bake with a piece of short rib and plenty of Malbec sauce on top. Finish with chopped parsley.
Chef tips
For a shinier sauce, let the braise rest for 10 minutes and skim some fat from the surface before reducing. Slice the potatoes thinly so the bake cooks evenly.
Substitutions
You can replace provoleta with semi-aged Sardo cheese or firm mozzarella. If Malbec is unavailable, use another dry red wine. Leek can be replaced with a smaller amount of mild onion.
