Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Lightly grease a baking tray with half of the olive oil.
- 2
Place the edamame in a food processor and pulse several times until finely chopped, not pureed. Transfer to a large bowl.
- 3
Add the ground turkey, ground oats, beaten egg, red onion, garlic, 2 tablespoons of the parsley, half of the lemon zest, 1 tablespoon of the lemon juice, cumin, smoked paprika, 3/4 teaspoon salt, and 1/4 teaspoon black pepper to the bowl. Mix until well combined.
- 4
With lightly damp hands, shape the mixture into 16 even oval or round bites.
- 5
Place the sesame seeds on a plate. Roll each bite lightly in the sesame seeds to coat the surface, then arrange them on the tray. Brush or drizzle with the remaining olive oil.
- 6
Bake for 16 to 18 minutes at 220 °C / 425 °F, turning halfway through, until the bites are golden and cooked through.
- 7
Meanwhile, make the dip by mixing the Greek yogurt, cottage cheese, dill, remaining parsley, remaining lemon juice, remaining lemon zest, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a bowl until creamy.
- 8
Serve the bites hot with the creamy lemon herb dip on the side.
Chef tips
For a smoother dip, blend the cottage cheese before mixing it with the yogurt. For a deeper golden crust, place the bites under the broiler for 1 to 2 minutes, watching closely.
Substitutions
You can substitute the turkey with ground chicken. Dill can be replaced with mint or chives. If you do not have ground oats, use rolled oats pulsed in a blender. For a gluten-free version, make sure to use certified gluten-free oats.
