Instructions

1. Preheat the oven to 400 °F / 200 °C. Place the pumpkin on a baking dish and toss it with 1 tablespoon of the sunflower oil, a pinch of salt, black pepper, and the dried oregano. Roast for 30 minutes, until golden and tender.
- 2
2. Meanwhile, pat the pork shoulder dry with paper towels and season it with the remaining salt, black pepper, sweet paprika, and crushed chili flakes.
- 3
3. In a large oven-safe pot or heavy Dutch oven, heat the remaining tablespoon of sunflower oil over medium-high heat. Brown the pork on all sides for 8 to 10 minutes. Remove and set aside.
- 4
4. In the same pot, add the onion, carrot, and garlic. Cook for 6 to 8 minutes, stirring, until the vegetables soften and develop color.
- 5
5. Pour in the Malbec wine and scrape the bottom of the pot to release the browned bits. Cook for 3 minutes to let some of the alcohol evaporate.
- 6
6. Add the vegetable stock and bay leaves. Return the pork to the pot. Cover and transfer to the oven at 325 °F / 160 °C for 2 hours, or until the meat is very tender.
- 7
7. When the roasted pumpkin is ready, set it aside. In a separate saucepan, melt the butter over medium heat, add the corn kernels, and cook for 4 minutes.
- 8
8. Add the heavy cream to the corn saucepan and cook for 3 to 4 minutes. Add the roasted pumpkin and stir gently, lightly mashing part of it to create a creamy yet rustic texture. Adjust with salt and black pepper.
- 9
9. Remove the pork from the oven and let it rest for 10 minutes. Discard the bay leaves. If you want a more concentrated sauce, boil the cooking liquid for 5 minutes over medium heat until slightly reduced.
- 10
10. Shred or slice the pork into thick portions. Mix the fresh parsley with the lemon zest and lemon juice.
- 11
11. Serve a base of creamy corn and pumpkin stew, top with the braised pork, and finish with the parsley-lemon mixture. Spoon some of the Malbec sauce over the top before serving.
Chef tips
For deeper flavor, take your time browning the pork well. The stew is best when part of the pumpkin breaks down and naturally thickens the cream.
Substitutions
You can replace the pork shoulder with pork butt. If you do not have Malbec, use another dry red wine. Heavy cream can be replaced with plant-based cream, though the final flavor will be different.
