Instructions

  1. 1

If using wooden skewers, soak them in water for 20 minutes. Preheat a grill or grill pan over medium-high heat, about 450 °F / 230 °C.

  2. 2

In a large bowl, mix the pork with 2 tablespoons (30 ml) olive oil, garlic, smoked paprika, cumin, 1 teaspoon salt, and black pepper. Let it rest for 10 minutes while you prepare the remaining ingredients.

  3. 3

In a small saucepan, combine the maple syrup, apple cider vinegar, Aleppo pepper, Dijon mustard, fresh thyme, and the remaining 1/4 teaspoon salt. Cook over low heat for 2 to 3 minutes, just until combined and slightly thickened. Remove from the heat.

  4. 4

In a separate bowl, toss the zucchini and red onion with the remaining 1 tablespoon (15 ml) olive oil.

  5. 5

Assemble the skewers, alternating pork loin, zucchini, red onion, and plum wedges until all ingredients are used.

  6. 6

Clean and lightly oil the grill grates. Grill the skewers for 10 to 12 minutes at 450 °F / 230 °C, turning every 2 to 3 minutes so they brown evenly.

  7. 7

During the last 3 minutes of cooking, brush the skewers with the maple Aleppo glaze, turning them so the glaze caramelizes without burning.

  8. 8

Check that the pork reaches a safe internal temperature of 145 °F / 63 °C. Remove the skewers from the grill and let them rest for 3 minutes.

  9. 9

Transfer the skewers to a platter, drizzle with lemon juice, and, if desired, spoon over a few drops of the remaining glaze for serving.

Chef tips

Choose firm plums so they hold their shape on the grill. If the glaze thickens too much, add 1 tablespoon / 15 ml warm water before brushing.

Substitutions

You can swap the pork loin for chicken breast or firm tofu. If you do not have Aleppo pepper, use mild red pepper flakes. Thyme can be replaced with a smaller amount of chopped rosemary.
