Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes to keep them from burning on the grill.

  2. 2

    2. In a large bowl, mix together the orange juice, orange zest, 2 tablespoons balsamic vinegar, 1 tablespoon honey, 2 tablespoons olive oil, garlic, rosemary, 1 teaspoon salt, black pepper, and red pepper flakes.

  3. 3

    3. Add the pork loin to the marinade and toss well to coat all the cubes. Let stand for 15 minutes in a cool spot or up to 30 minutes in the refrigerator.

  4. 4

    4. Meanwhile, place the fennel in a bowl and toss it with the remaining 1 tablespoon olive oil and remaining 1/4 teaspoon salt.

  5. 5

    5. Preheat the grill to medium-high heat, about 425 °F / 220 °C. Clean and lightly oil the grates.

  6. 6

    6. Thread the skewers, alternating pork loin, fennel, and red grapes until all ingredients are used. Discard the marinade that touched the raw meat.

  7. 7

    7. In a small saucepan or heatproof container, combine the remaining 1 tablespoon balsamic vinegar, the remaining 1 tablespoon honey, and the Dijon mustard. Warm over low heat or on a cooler part of the grill for 1 to 2 minutes, just until combined and slightly thickened.

  8. 8

    8. Grill the skewers for 14 to 18 minutes at 425 °F / 220 °C, turning every 3 to 4 minutes so the pork, fennel, and grapes cook evenly.

  9. 9

    9. During the last 3 minutes of cooking, brush the skewers with the balsamic, honey, and mustard glaze so it lightly caramelizes without burning.

  10. 10

    10. Remove the skewers when the pork reaches an internal temperature of 145 °F / 63 °C and the fennel is tender with golden edges. Rest for 3 minutes.

  11. 11

    11. Transfer the skewers to a platter, sprinkle with fresh parsley, and serve immediately.

Chef tips

For better browning, lightly pat the pork dry with paper towels before marinating. If the grapes are very large, halve them and thread them close to the fennel so they do not burst too quickly.

Substitutions

You can substitute the pork loin with turkey tenderloin. Fennel can be replaced with chunks of white onion or romaine hearts split lengthwise and grilled separately. Honey can be swapped for maple syrup, though the flavor will be different.
